Vinification : Hand picked grapes. Traditional vinification with : Quality splitting up of the musts - alcoholic fermentation under temperature control. Maturing on the lies (yeasts autolysis)

Aging potential : 4 to 6 years

Harvest : Mid October

Age of the vines : 30 years

Description : A beautiful shiny colour with discrete green reflections. Lemony nose progressing to the mineral. On the palate Anis notes express themselves discreetly. A fresh and structured mouth which makes it an excellent gastronomy wine.
Food pairing : Seafood and shellfish, fish. This is a perfect wine dedicated to festive meals.
